Here is what you will need: • 4 chicken breasts, skinless, drumsticks removed, cut into 1/2-inch cubes (about 1 pound) • 1 cup chicken broth (about 3 cups) • 3 tablespoons olive oil • 1 large red onion, sliced into 1 inch pieces • 1 teaspoon garlic powder • 1/4 teaspoon salt • 1 1/3 cups chicken stock (about 10 cups) – For the toppings: 1 large tomato, diced in 1/8-inch pieces • 3 cloves garlic, crushed • 1 tablespoon olive oil, to taste (or to taste and use the rest of the ingredients for toppings) Directions: 1.
Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
Place the chicken breasts in a large bowl and pour the chicken broth over them.
